The perfect winter comfort food. Traditional banana bread but with a twist, the addition of warming winter spices such as cinnamon, cardamom, mixed spice and all spice gives it an extra depth of flavour. Gluten and Dairy free.
Ingredients:
11/2C Buckwheat Flour (gluten and wheat free despite the name, actually part of the rhubarb family)
1C coconut sugar
1tsp baking powder
1/2tsp baking soda
1tsp cinnamon
1tsp each mixed spice and all spice
1/2tsp ground cardamon
1C mashed banana
1 egg
1/2 plain yoghurt (I used protein + but you can use coconut or almond for dairy free)
1/4C olive oil
1/3C pure maple syrup, rice malt syrup or honey
2tsp vanilla extract
1/2c dark chocolate (optional)
Method:
Preheat oven to 160c. Mix all ingredients together in a bowl to well combined. Add more spice until you get your desired taste. Pour into a loaf tin. Bake for 1hour 10minutes or until a knife comes out clean
