Breakfast Bar

I’m a strong believer that you should begin your day as you intend to go on. So often we begin our day in a rush, rolling out of bed at the last minute and then having to miss breakfast to get to work on time. This is likely how the rest of the day will go if this is how it begins.

When we begin the day slower and provide our bodies with a nourishing breakfast which contains fat and protein, we are more likely to have balanced energy, mood and productivity across the day.

If you are low on time or you don’t have much of an appetite, this Breakfast Bar might be an easy addition to begin your day of balanced energy and mood.

Serves 8

1Tbsp chia seeds

1/4C water

1/2C pure maple syrup

1/2C protein powder of choice (high quality)

11/2C rolled oats (rice flakes could be subbed if you cannot have oats)

1/2C dried figs chopped

1C your choice pumpkin seeds, sunflower seeds or sesame

1/4C raw cacao powder

1tsp pure vanilla extract

1/2 C almonds chopped

Pre-heat oven to 160C. Mix chia seeds and water together and allow to sit for 10 minutes. Add all other ingredients and stir well to combine. Press the mixture firmly into a 20cm greased or lined baking tray. Cook for 30 minutes until golden. Set aside to cool before cutting.
