Choc Protein Brownie Slice

A decadent, but super satisfying snack or treat, perfect for that 3pm energy slump. Diary, gluten and refined sugar free. Utilising bone broth protein, it’s gentle on the gut for those who struggle with dairy, but is a more digestible form of protein as opposed to other plant based versions such as pea protein.

Ingredients:

Base

1C walnuts

3/4C medjool dates

5Tbsp raw cacao powder

4Tbsp chocolate bone broth protein

1/4C almond butter

Big pinch pink Himalayan salt

Coconut oil melted or Olive oil – see method for amount

Middle:

1/2C cashew or almond butter (or peanut butter I’m just not a massive fan)

1/4C pure maple syrup or brown rice syrup

2Tbsp coconut oil melted it olive oil

1/2tsp vanilla

Big pinch salt

Chocolate top:

1/2 block Whittickers Oat Milk Chocolate or very dark chocolate would also work

Method:

Put all base ingredients in a food processor and blend till a fine crumb is formed. While processor is still on, drizzle in a small amount of melted coconut oil or olive oil, only until the mixture comes together, if it sticks together that’s enough oil. Press into a lined loaf tin, place in the freezer while you make the middle layer.

Combine all the middle layer ingredients into the food processor (clean it between) and process till smooth. Pour on top of the base and spread into all the corners so it’s cover it evenly.

Melt the chocolate in a saucepan and pour on top. Add more salt on top of the chocolate if you like salted chocolate. Place in the freezer to set till firm, then cut into bars before it fully sets. Store back in the freezer.
