Matcha Energy Bar

Matcha is an amazing superfood and has become part of my daily diet. It’s finely ground green tea leaves which originates from East Asia. It’s a vibrant green colour and has an earthy taste, quite different traditionally brewed green tea leaves. The reason I love it is that it’s rich in anti-oxidants which are great for our heart health and general anti-aging across the skin and body. It contains an amino acid called L-theanine which helps induce sleep and decrease stress levels.

Matcha does contain caffeine, however the caffeine in Matcha as opposed to that in coffee or energy drinks has a more steady lift and it’s benefits last longer which helps prevent that sharp peak and then crash which can be beneficial for brain function, memory and enhanced memory.

The Matcha powder teamed with nuts, seeds, healthy fats and protein makes for a super sustaining, energy and focus boosting snack. I use Misty Day Plant Potions Magick Matcha which also contains Ashwagandha which is well know for assisting with a healthy stress response, maca which is great for hormone health, along with adaptogen herbs which help to uplift brain, body and mood.

Makes 12 bars

Ingredients: I used all organic ingredients for maximum nutrient density.

375g fresh medjool or diglet dates

2tsp Matcha powder

1/4C choc protein powder (this can be dairy free like Bone Broth Protein)

1/4C Almond Butter

2tsp Vanilla extract

1/3C raw cacao powder

1C chopped Almonds

1/4C Pumpkin seeds

1/4C Sunflower seeds

2Tbsp Chia seeds

2Tbsp Flaxseeds

1/4C LSA (Linseed, sunflower and almonds ground)

Big pinch salt

Extra Matcha for dusting on top.

Method:

Add all ingredients to a high speed food processor and blend on high till all ingredients are well combined and mixture sticks together. You can add some water if it’s a little dry. Once well combined. line a 30×20 approx dish, press mixture down firmly then dust with approx a teaspoon of Matcha. Set in the fridge for a few hours before cutting, then store back in the fridge.
